Cajun Chicken Pasta

  • 3/4 lb. Rotini Pasta, cooked according to package
  • 2 TBSP - Butter
  • 2 Boneless Skinless Chicken Breast Halves, sliced 1/2” thick
  • 3 - Garlic Clove, minced
  • 1 bunch Green Onion, chopped
  • 3 – Onions - peeled, diced
  • 2 TBSP – Cajun seasoning or to taste
  • 1 tsp. – Freshly Ground Black Pepper
  • 1 tsp. – Ground Red Pepper
  • 8 oz. Heavy Cream
  • 1 Green Bell Pepper, julienned
  • 1 Red Bell Pepper, julienned
  • 8 oz. Fresh Mushrooms, quartered
  • 1/2 Cup – Parmesan Cheese, grated

Directions

  1. 1.Cook pasta according to package, drain & set aside.
  2. Melt butter in a large skillet over medium heat, add chicken: cook, stirring frequently, until browned about 6-8 minutes.
  3. Add garlic, onions, Cajun seasoning, ground black & red peppers, bell peppers & mushrooms: stir to combine. Cover & cook 5 minutes
  4. Uncover & stir in cream, let simmer for another 2 minutes
  5. Stir in parmesan, remove from heat stir in cooked pasta and serve immediately
