Mediterranean Layer Dip

Serves: 8

Ingredients

  • 16 ounces hummus
  • 3 large roasted red peppers
  • 1 large English cucumber , peeled and chopped
  • 1 cup pitted kalamata olives
  • 4 ounces of tabbouleh

Directions

  1. In a serving dish spread a layer of half 12 oz hummus.
  2. In a food processor, blend remain hummus and roasted red peppers until smooth.
  3. Spread this layer on the hummus.
  4. Top cucumbers, olives. Add Tabbouleh.
  5. Serve immediately or cover with plastic wrap and keep refrigerated for up to 2 days.
  6. Can be served with vegetables.
