Ginger Miso Brussels Sprouts Slaw

Serves: 6

Ingredients

  • 1 Tbsp. rice vinegar 
  • 3 tsp. finely grated ginger 
  • 1 small garlic clove, finely grated 
  • 2 Tbsp. white miso paste 
  • 2 tsp. toasted sesame oil 
  • 1 tsp. white sesame seeds 
  • 2 bunches kale, shredded
  • 1/2 lb. Brussels sprouts, shaved
  • 1 ea. sweet potato, diced small and roasted

Directions

  1. Mix all the ingredients int a jar or other closable container with 2 Tbsp. of hot water.
  2. Mix until smooth.
  3. Toss with Brussels sprouts, kale and sweet potato.
