Butternut Squash Bisque

Ingredients
- Butternut Squash 3 lbs
- oil ½ cup
- Onion, Carrots, Celery Diced 1 #
- Sage 1 sprig
- Bay leaves 1 ea
- Vegetable stock .5 Gallons
- Brown Sugar 1 oz
- Honey 1 oz
- Maple syrup ¼ cup
- Salt and pepper to taste
- Cinnamon 1/4 Teaspoon
- Nutmeg pinch
- White pepper pinch
- Cream 1 Pint
Directions
- Halve butternut Squash, add olive oil and salt and pepper and roast until golden brown
- Sweat mirepoix in oil,
- Add vegetable stock and bring to boil. Reduce to simmer and add seasonings.
- Allow to cook out and then blend vegetables.
- Add cream and continue to simmer.
- Adjust seasoning
