Creole Crawfish Linguini

Creole Crawfish Linguini

Ingredients

  • 8 oz. Raw Linguini
  • 10 oz. Cooked Crawfish Tail Meat
  • ½ Red Pepper
  • ½ Green Pepper
  • ½ Orange Pepper
  • ¼ - ½ Red Onion (depending on size)
  • 1 tbsp. Cholula
  • ½ tbsp. Minced Garlic
  • 1 tbsp. Olive Oil
  • ¼ cup White Wine
  • 1 cup Heavy Cream
  • 1 tsp. Jerk Seasoning
  • 4 oz. Parmesan Cheese
  • Salt to taste

Directions

  1. Cook linguini to al dente then shock in cold water to stop cooking; strain water and reserve for later
  2. Cut peppers and onions to thin Julienne and mix well
  3. Heat a 12” sauté pan on medium to medium-high heat
  4. Once pan is hot, add oil then peppers and onions and sauté for 3-4 minutes
  5. Add crawfish tail meat and garlic and sauté for 1 minute then deglaze with white wine, cooking alcohol out for 1 minute
  6. Add heavy cream and seasonings
  7. Once cream is simmering, add linguini and mix well
  8. Add parmesan and cook to desired thickness
  9. Add salt to taste
