Boneless Roasted Lamb Shoulder

Ingredients
- 8-10 lbs. Boneless Lamb Shoulder
- ¼ - ½ cup Olive Oil
- 2 tsp. fresh rosemary
- 2 tsp. fresh thyme
- 2 tsp. minced garlic
- 2 tsp. salt
- 2 tsp. pepper
Directions
- Preheat oven to 325 degrees
- Chop fresh herbs and put to the side
- Mix salt, pepper, herbs, garlic and oil together
- Rub mixture on lamb shoulder and coat meat
- Place lamb shoulder in 2-4 inch roasting pan and cook at 325 degrees for 3 hours
- Let rest for 10-15 minutes then cut and serve
