Elevate your breakfast with this delicious brunch idea using a spring vegetable favorite asparagus. Combine it with creamy goat cheese, roasted red peppers and farm fresh eggs for a heavenly baked breakfast pastry. Sometimes less is really more. Asparagus, Goat Cheese & Roasted Red Pepper Quiche

Serves: 6
Ingredients
- 6 large eggs
- 4 oz Heavy Whipping Cream
- ½ tsp Ground White Pepper
- 1 tsp Salt
- ½ tsp Fresh Chopped Thyme
- 2 oz Crumbled Goat Cheese
- 2.5 oz Diced Roasted Red Peppers
- 2 oz Bias Sliced Asparagus
- 1 each 9” Pie Shell
Directions
- Par bake your pie shell in a 350-degree pre heated oven for 8 minutes. Set aside and allow to cool.
- In a large bowl crack your eggs and add the heavy cream, salt, pepper, and thyme and mix well.
- In the pie shell sprinkle the red peppers, goat cheese, and asparagus. Making sure they are evenly dispersed.
- Pour the egg mixture into the shell on top of the ingredients.
- Place into a 350 degree oven for 30 to 40 minutes or until the center of the quiche is firm.
