We can’t have enough grilling recipes for our toolbox. The great thing about this recipe is marinading can make even the tougher cuts of meat more tender. I love using sirloin and flank, but this would work well for your favorite kind of kabob meat as well. Plus, this marinade is outstanding for pork and bone in chicken too.

Brazilian “Churrasco Style” Marinated Steak Kabobs

Makes 8-12 kabobs

Prep Time: 90 Minutes including marinating time

Serves: 8

Ingredients

  • Brazilian Steak Marinade
  • Ingredients
  • · ¼ cup fresh parsley
  • · ¼ cup fresh cilantro
  • · ¼ cup extra virgin olive oil
  • · ¼ cup water
  • · 2 Tablespoons lime juice
  • · 2 Tablespoons freshly minced garlic
  • · 1 Tablespoon kosher salt
  • · 1 teaspoon black pepper
  • · 1 teaspoon crushed red pepper flakes
  • · 2 Tablespoons Soy Sauce
  • · 2 Tablespoons Worcestershire Sauce

  • Kabobs
  • Ingredients
  • · 1 1/2 lbs. top sirloin steak cut into 1 1/2” cubes
  • · 1 red bell pepper sliced into 1 1/2” chunks
  • · 1 green bell pepper sliced into 1 1/2” chunks
  • · 1 large onion sliced into 1 1/2” chunks

Directions

  2. 1. Mix all marinade ingredients in the blender. Remove ¼ cup to use later for basting.
  3. 2. Add beef to the remaining marinade and turn to coat. Marinate 4-6 hours in the refrigerator.

  4. Assemble Kabobs
  5. 1. Note: Soak wooden skewers for at least 30 minutes in water before grilling or broiling.
  6. 2. When ready to cook, thread beef and veggies onto skewers.

  7. Grilling Directions
  8. 1. Grease and preheat grill to medium high heat. Grill skewers until lightly charred all over, approximately 2-3 minutes per side, basting with remaining marinade halfway through cooking.
  9. 2. Let rest five minutes before serving. Delicious served with Vince and Joe’s Gourmet Market’s Lebanese Rice.
