Butternut Squash Bisque

Ingredients

  • Butternut Squash 3 lbs
  • oil ½ cup
  • Onion, Carrots, Celery Diced 1 #
  • Sage 1 sprig
  • Bay leaves 1 ea
  • Vegetable stock .5 Gallons
  • Brown Sugar 1 oz
  • Honey 1 oz
  • Maple syrup ¼ cup
  • Salt and pepper to taste
  • Cinnamon 1/4 Teaspoon
  • Nutmeg pinch
  • White pepper pinch
  • Cream 1 Pint

Directions

  1. Halve butternut Squash, add olive oil and salt and pepper and roast until golden brown
  2. Sweat mirepoix in oil,
  3. Add vegetable stock and bring to boil. Reduce to simmer and add seasonings.
  4. Allow to cook out and then blend vegetables.
  5. Add cream and continue to simmer.
  6. Adjust seasoning
