Creole Crawfish Linguini

Ingredients
- 8 oz. Raw Linguini
- 10 oz. Cooked Crawfish Tail Meat
- ½ Red Pepper
- ½ Green Pepper
- ½ Orange Pepper
- ¼ - ½ Red Onion (depending on size)
- 1 tbsp. Cholula
- ½ tbsp. Minced Garlic
- 1 tbsp. Olive Oil
- ¼ cup White Wine
- 1 cup Heavy Cream
- 1 tsp. Jerk Seasoning
- 4 oz. Parmesan Cheese
- Salt to taste
Directions
- Cook linguini to al dente then shock in cold water to stop cooking; strain water and reserve for later
- Cut peppers and onions to thin Julienne and mix well
- Heat a 12” sauté pan on medium to medium-high heat
- Once pan is hot, add oil then peppers and onions and sauté for 3-4 minutes
- Add crawfish tail meat and garlic and sauté for 1 minute then deglaze with white wine, cooking alcohol out for 1 minute
- Add heavy cream and seasonings
- Once cream is simmering, add linguini and mix well
- Add parmesan and cook to desired thickness
- Add salt to taste
