Jerk Pork Chops with Mango Salsa

Ingredients
- 2 Pork Chops Bone-in (1 inch thick)
- Jerk Marinade
- 2 Tbs All Spice
- 1 Cinnamon Stick
- 1 Tsp Ground Nutmeg
- 1 Scotch Bonnet Pepper (steamed & seeded)
- 1/2 Red Onion
- 3 Green Onions (cleaned)
- 3 cloves Garlic
- 3 Tbs Fresh Ginger
- 1 Tbs Fresh Thyme
- 1 Tbs Granulated Sugar
- 1 Tbs Soy Sauce
- 2 Tbs Worcestershire Sauce
- 3 Tbs Fresh Lime Juice
- Mango Salsa
- 1/2 Jalapeno Pepper (seeded and diced)
- 3 Tbs Fresh Lime Juice
- 2 1/2 Mango (pitted and diced)
- 1 1/2 cups Red Pepper (diced)
- 1/4 Fresh Cilantro (chopped)
Directions
- Marinade:
- Finely grind the cinnamon stick in a spice mill. Transfer to a food processor.
- Add all of the remaining marinade ingredients to the processor and blend until smooth.
- Season the pork chops with salt and pepper.
- Rub Pork Chops with the marinade, cover and refrigerate for at least 4 hours (preferably overnight).
- Salsa:
- Combine all mango ingredients and chill.
- Grill:
- Remove pork chops from marinade and place on a medium high gas grill. Turn pork chops once. Total grill time 7 minutes.
- Serve with mango salsa.
