Organic Chicken with Citrus and Rum Glaze
Serves:
- Dark rum
- Shallots minced
- Grapefruit juice
- Lemon juice
- Lemon zest
- Thyme, fresh chopped
- Molasses
- Cinnamon stick
- Star anise
- Black peppercorn
- Olive oil
- Kosher salt
- Ground white pepper
- Orange zest
- Organic chicken breast boneless, skin-on
Directions:
1. Glaze: Place rum and shallot in a skillet and warm over medium heat for about 2 minutes. Remove from heat. Carefully (with a safety lighter) ignite rum to burn off the alcohol. It will take about 6-8 minutes for the flames to die down. Rum will be reduced to about 1 cup.
2. Add grapefruit juice, lemon juice, lemon zest, thyme, molasses, cinnamon stick, star anise, and peppercorns. Heat over medium heat to reduce slightly. Reduce the heat to low and simmer for 10 minutes. Strain; discard solids. Keep warm until ready to use.
3. Chicken: Combine oil, salt, pepper, and zest. Thoroughly rub mixture on the chicken breast just before baking.
4. When chicken is cooked through, baste generously with rum sauce. Drizzle plates with remainder of the sauce and serve.
